Two Ingredient Pancakes

Hi Everyone!
Here is my FAVE recipe from The Skinny Confidential: 2 ingredient pancakes!! OMG what?? I like to add in a few spices but it's totally optional!

·         1 ripe banana, mashed
·         2 eggs
Optional additions:
·         2 tablespoons of ground flaxseed
·         a bit of vanilla
·         a dash of cinnamon
·         a pinch of nutmeg
Mash the banana with a fork. Add in the eggs and whisk until all combined. Add in additions. Add extra-virgin olive oil in a pan at medium low heat. Add silver dollar-sized amount to the pan, and cook.

Enjoy with berries and a bit of syrup or honey!
