Spring into this Summer salad!


I have been so obsessed with this kale and strawberry salad! I've literally been making it everyday and its DELISH!!
I am a HUGE vinegar fan (kinda weird), for this recipe I used balsamic vinegar
let's take moment to look at the benefits of balsamic vinegar!

  • Normalizes blood sugar
  • Stabilizes cholesterol level
  • Keeps blood glucose levels steady
  • Full of antioxidants
plus its low in calories and yummy!

And if you aren't already convinced kale is the new spinach check this out:
  • High in calcium
  • High in vitamins K, C, and A
  • Good source of copper, potassium, iron, manganese, and phosphorus
Here's the recipe:
Ingredients
  • 4 kale leaves
  • 4-5 strawberries
  • About 2-3 Tbls Balsamic vinegar
  • Salt and Pepper to taste
  • A squeeze of lemon juice 
I added some avocado in mine but that is completely optional!

Rip up the kale leaves into bite sized pieces
Pour the vinegar and lemon juice over the leaves and allow the leaves to marinate for a few hours (2-3). Kale leaves are pretty waxy, so allowing the the acids to break it down a little bit makes the kale way more flavorful and easier to eat!
Add in the strawberries, salt and pepper, let it sit for about 3 minutes (the balsamic vinegar makes the strawberries SUPER sweet :))
