Baked Salmon + Kale and Carrots

Hi All!
Here's a quick little post on what I had for dinner the other day! Lemon and honey baked Salmon and kale with garlic and carrots with brown rice on the side!!

Salmon:
Ingredients:
  • 1/3 cup honey
  • 2 teaspoons minced garlic
  • 2 tablespoons EVOO
  • 2 tablespoons white wine vinegar
  • about 1/3 cup of lemon juice
  • 1 tablespoon dried parsley (or really any herb)
  • Salt and pepper to taste
  • 2 – 2 1/2 pounds salmon
Whisk together all the ingredients (except the salmon LOL). 
Pour a little EVOO in a glass baking pan
Place the salmon (skin side down) in the pan
Pour the sauce of the salmon
Bake at 350 for about 15 mins

Veggies
Ingredients:
  • About 5 leaves of kale
  • 1/2-1 large carrot
  • 2 cloves of garlic
  • Salt and pepper to taste
  • EVOO
Start off with the EVOO and garlic in a pan, until fragrant
Add in the carrots (cook for about 3-5 minutes)
 Add in the kale and salt and pepper)
Cook until the kale has cooked down.
